SKYR Is The New Superfood.
There's a new superfood on the block and this one is from Iceland.
Technically, SKYRis strained cheese made from skimmed milk (been a Icelandic mainstay for centuries) but for anyone living outside of an igloo SKYRis yoghurt.
With a similar nutritional profile to Greek yoghurt, its the high calcium and protein profile in SKYRthat sets it apart as star player in healthy eating.
And also its thick, creamy texture - turn your spoon upside down and it stays put.
Now, Woolworths has created its own Australian take on this Icelandic style of yoghurt – you’ll find it in the yoghurt fridge.
Here, are three ways I've added SKYR into our summer breakfast roster.
SKYR & Berry Muffins.
1¾ cups plain flour
1½ teaspoon baking powder
⅓ cup melted coconut oil
½ cup maple syrup
2 eggs ( at room temperature)
1 cup plain Woolworths Icelandic Style SKYR Yogurt
1 teaspoons vanilla extract
1/2 teaspoon lemon zest
1½ cups frozen berries (raspberry, blueberry, mixes, mulberry)
1 tablespoon Demura sugar for sprinkling on top
Preheat the oven to 180 degrees. Line 12 cup muffin tray with muffin wrappers.
In a large mixing bowl, combine the flour and baking powder. In a small mixing bowl, combine the melted and slightly cooled coconut oil and maple syrup. Beat well with a whisk. Add the eggs one at a time, then add the SKYR, vanilla and lemon zest. Mix well.
Combine wet and dry ingredients and mix well with a cake spatula. Gently fold the berries into the batter. The mixture should be thick..
Divide the batter evenly between the 12 muffin cups. Sprinkle the tops of the muffins with sugar.
Bake the muffins for 25 minutes or until the muffins are golden on top.
SKYR Breakfast Bowl.
These are really a choose your own adventure thing.
When constructing a breakfast bowl you want to supercharge it as much as possible:
♥ use plenty of colour -pomegranate, goji berries, kiwi, papaya, berries, watermelon, pineapple etc.
♥ nuts/seeds, such as ppepita, almonds, and unsalted pistachios.
♥ plain Woolworths Icelandic Style SKYR Yogurt and some milk or almond milk if you want it a little wetter.
♥ granola, cereal or oats. Chia, LSA and some toasted coconut flakes.
SKYR Peanut Butter Pikelets.
Not just for kids. These are so delicious. And mor-ish. So you've been warned...
You could of course make the pikelets but I didn't - they were store bought.
Then all you do is mix a tablespoon of Woolworths Icelandic Style SKYR Yogurt with a tablespoon of peanut butter. I blended it in a glass jar so I could keep the leftovers for a couple of days.
Then spread on pikelet and top with banana and honey. Works really well on gluten-free toast too.
