Three Minute Lunch Smash.
This is a lunch that I make most Fridays.
When my Woolworthsshop has run down for the week and I'm waiting to re-stock.
In our house we buy (and eat) a lot of avocado, cherry tomatoes, chilli and coriander. They are staples that are used on everything from salad to the kids lunch wraps.
At the end of the week, there's a handful of everything left but more often than not there are more wraps than we can eat. So I invented this three minute open smash sandwich to overcome our "what do we do with the leftover wrap" problem.
All the ingredients are from the supermarket, delish and easier than spelling your own name.
It would actually be embarrassing to write this into any form of methodology because it's bread and four ingredients but...there's a little something that I do to the wrap to revive it which is it's genius.
