Salmon doesn’t need much fuss to be brilliant. In fact the simpler the better so the fish remain the hero. Here, we marinated the fish in fresh lemon juice and slices, salt, pepper, olive oil and fresh fennel, parsley and thyme. Bake slow and low (150 for 30-45 mins) and you’re done.

A perfect accompaniment to seafood and an absolute Easter classic. Lamb chops are a true crowd pleaser. Just follow the instructions to bake and then garnish with your favourite fresh herbs.
